Red Velvet Cupcakes Recipe

Hey everyone!

I’ve been trying to balance beauty/fashion posts with food and decor posts. Because the last few posts were about beauty and fashion, I thought I would share another recipe today, and as you can probably tell from the title, it is a recipe for red velvet cupcakes!

I can’t remember exactly where I got this recipe from, but I think it’s from my aunt. Anyways, I’ve been using this recipe for a while now and every time I make it I get compliments on the cupcakes so I know it’s good! Here it is!

Red Velvet Cupcakes

Ingredients:

For the cupcakes:

  • 1 1/4 cup + 1 tbs of cake flour
  • 1/4 tsp baking powder
  • 2 tbs cocoa powder
  • 1/2 tsp salt
  • 85g unsalted butter
  • 1 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons red food colouring
  • 1 cup buttermilk
  • 1/4 teaspoon white vinegar
  • 1/4 teaspoon baking soda

For the icing:

  • 250g cream cheese
  • 1/4 cup unsalted butter
  • 1/2 tsp vanilla extract
  • 1 cup icing sugar
  • pinch of salt

What to do

  1. Start by preheating your oven at 180˚C and lining your cupcake pans, this recipe makes between 15 and 20 cupcakes depending on the size of your cupcake pans.
  2. Sift the flour, baking powder, cocoa and salt into a bowl, then set it aside
  3. In a different bowl, beat the butter and sugar together until they are light and fluffy
  4. Beat the eggs, vanilla and food colouring into the sugar and butter mixture
  5. Add one-third of the flour mixture to the butter and sugar mixture
  6. Once they’re well mixed together, add half of the buttermilk, then another third of the flour mixture, followed by the rest of the buttermilk, and finally, mix in the rest of the flour
  7. In a small separate bowl, mix the vinegar and baking soda, then mix this mixture in with the rest of the batter
  8. Divide the batter evenly between the cups and place the pans in the oven. Bake them for 20-25 minutes, or until they’re firm. Once they’re done, leave them to cool on a cooling rack
  9. While the cupcakes are cooling, make the icing. Start by blending the cream cheese and the butter together until smooth.
  10. Add in the icing sugar, salt and vanilla to the mixture and blend it all together until fluffy
  11. Finally, once the icing is finished and the cupcakes are cooled, start icing them! You can ice them however you want, with a spatula or piping bag, whatever you want to make them beautiful!

Iced Mocha Recipe

Hey everyone!

I really love a nice cold drink on warm afternoons, sometimes a lemonade, sometimes a smoothie and sometimes an iced mocha! Everyone loves a nice Starbucks once in a while but it gets really expensive so I tried making an iced mocha at home! After a couple of tries I found the perfect iced mocha recipe, it’s not the same as Starbucks but I still think it tastes amazing, so here is the recipe!

Ingredients:

  • 1 shot of expresso coffee
  • 1 cup milk
  • 2 tablespoons unsweetened cocoa
  • 2 tablespoons sugar
  • Whipped cream
  • Oreo cookies

What to do:

  • Start by making some milk ice cubes with about half of the milk. Depending on how thick you want your drink to be, you can make more or less milk ice cubes, but make sure you only use one cup of milk in total
  • Once the milk ice cubes are solid, put them in a blender with the rest of the liquid milk, the coffee, the cocoa and the sugar and blend
  • When it is all blended together, pour the mocha into a glass and garnish it with whipped cream and Oreo cookies, you don’t need this but it makes it even more like the perfect Starbucks drink

I hope you enjoy every last drop of this, like most recipes, you can alter this one to however you want it, you can use more or less coffee depending on what you prefer, or add cocoa, or milk and so on.

Mango-Strawberry Smoothie

Hey everyone!

Recently, I’ve been getting kind of bored with the usual fruit juice and cereals for breakfast so I decided to change it up a little and looked for some alternatives, and the most obvious is smoothies. I really love smoothies, but until recently, I’d only been having them for snack, in the afternoon, once in a while. Anyways, I went down to my kitchen to look at what fruits we had and make a smoothie and I found frozen strawberries and mangoes, as well as some milk and yogurt, and got started! I chopped up the fruits, put them in the blender with some milk and yogurt and blended away! It was so delicious it became my breakfast staple and I just had to share it!

Here is the recipe (for 1 serving)

Ingredients:

  • 1 ripe mango
  • 6-8 frozen or fresh strawberries (I use frozen, I like the consistency better, but both are good!)
  • 4 tablespoons plain greek yogurt
  • 2 tablespoons of fresh milk

 

Steps:

  • Slice the mango and cut the strawberries into quarters and put it all in a blender. The smaller the pieces, the easier to blend.
  • Add the yogurt and milk into the blender
  • Blend it all together
  • Pour into a tall glass and enjoy!

And it’s that easy, it literally takes me 5 minutes in the morning and I can drink it while getting ready or on the go! This is a really basic recipe that you can adjust however you want: if you want it sweeter, use vanilla yogurt instead of plain, if you want it more liquid, add more milk, the milk can also be replaced by almond milk, soy milk or buttermilk depending on your preference!
